The Worshipful Company of Bakers has unveiled details about its latest bursaries for a bespoke training course this summer.

Applications are now open for the course, which will take place at the acclaimed School of Artisan Food in Welbeck, Nottinghamshire. It has been designed specifically for bakers who have been working in commercial bakeries for at least three years, and thus not open to bakery students currently undertaking courses at college or university.

The summer 2026 course aims to provide a valuable opportunity for refreshing and enhancing skills as well as exploring the potential for upgrading standard bakery products to a higher level of finish and quality.

Attendees will have an opportunity to learn about artisan bread and pastry making from a team of highly experienced tutors in their field. Backed by theoretical information, they will be undertaking practical sessions in long-fermented breads made with blends of flours milled from grains both ancient and modern.

Techniques for the handling of highly hydrated doughs fermented with sourdough and/or yeast will be learned, including scaling, hand moulding, proofing and oven transfer. Pastry making sessions, meanwhile, will include working with laminated bi-and tri-coloured doughs, shortcrust, and hot water crust pastry. These will be used for both sweet and savoury products, the latter including options for vegan and vegetarian fillings.

The bursary fund from the Worshipful Company of Bakers will cover tuition, bed and breakfast accommodation, evening meals on the first and last nights, and one full set of bakery whites. Attendees will be responsible for their own traveling costs and insurance.

The Worshipful Company of Bakers is one of the oldest guilds in the country, tracing its roots back to 1155 with a Royal Charter from 1486 that historically regulated bread quality and price. It now supports the modern baking industry through education, training, and charitable work, with its headquarters at Bakers’ Hall on Harp Lane in the City of London.
