Matthew Verity, business unit director, chilled and bakery at Kantar Worldpanel UK, addressed the recent British Society of Baking (BSB) Autumn Conference.
“The only way you will grow your market is to open a new eating occasion,” said Verity, referring to the popularity of recent bakery innovations including thins and giant crumpets.
He referenced the fact that bakery as a category is in decline, but added there were ways and means to remain profitable and grow market share.
