Pots & Co has extended its handmade pudding range with an ‘upside-down’ baked lemon cheesecake.
The vegetarian-friendly product features a baked cheesecake cream on top of a layer of lemon curd, finished with a biscuit crumble.
The crumble is contained in a ‘hat’ that sits on top of the pot, which can be opened and sprinkled on top of the cheesecake.
This added a bit of restaurant-style theatre to the eating experience and kept the biscuit crumble crunchy, said the company.
“Re-inventing classic recipes has always been a passion of mine – I love seeing how we can take something as classic as a lemon cheesecake and put our own contemporary twist on it,” said Julian Dyer, founder of Pots & Co.
Most of Pots & Co’s pudding line-up are baked in colourful ceramic pots, sourced from a family pottery in Valencia. All products are handmade without preservatives or additives.
The cheesecake is available for an rrp of £2 and will be available in Waitrose from 29 April.
