A new patisserie has been created by the team behind restaurant brand Six by Nico.
The Valaria patisserie will open in Glasgow next week serving cakes, bakes, breads, chocolate and confectionery claimed to be ‘the most opulent cakes and baked goods Glasgow has ever seen’.
“We are excited to bring some of the most innovative and luxurious cakes Scotland has ever seen to Glasgow,” said Valaria general manager Ronan Mallon. “We are launching Valaria with a new concept store, debuting our signature bakes and goods that will be freshly prepared on site.”
The first Six by Nico restaurant was opened by chef Nico Simeone in Finnieston, Glasgow, in 2017. The brand now has 11 restaurant sites across UK and Ireland. Valaria is the group’s first patisserie and baked goods location.
With 34 seats, the former mobile phone shop in Byres Road site will cater for breakfast, brunch, lunch or takeaway customers.
Its product range will include artisan choux pastries and eclairs, including tiramisu, cereal milk, salted caramel, rhubarb & custard, and raspberry, rose, and lychee flavours. Tarte tatin, creme brulee, apple, cheer, and rhubarb flavoured patisserie, as well as French macaron flavours, will be available at the counter.
Breakfast pastries such as Danish, croissants, and pain au chocolat will be sold alongside a unique house coffee blend sourced responsibly from Brazil and Columbia and flavoured with dark chocolate, hazelnut, and candied mandarin.
Glasgow-based contractors One Call have redeveloped the site, with an interior featuring light, neutral tones with two core shades of pink and a pistachio green.
“This project has been exciting to work on as it’s very different from what we normally do,” said One Call CEO Mario Formasano. “More intricate detailing was required with a feminine touch to really bring the feeling of French patisserie to life.”
