British bakeries have been flooded in the past few years with American bakery items such as the cupcake. Cupcakes can be done well, and I think they'll be around for a long time to come, but the trend seems to have finally reached a plateau. For months, journalists have been desperately seeking its successor, tipping US confections such as the cake pop and the whoopie pie to take its place, but my prediction is that 2011 will see a return to British classics the scone, the flapjack, the Viccy Sponge and the Bakewell.

Kingsmill's smooth style

Allied Bakeries has launched a range of seeded Kingsmill loaves, including a smooth seeded loaf the first in the UK, according to the firm. The three lines: The Secretly Seeded One, The Lightly Seeded One, and The Really Seeded One, will be rolled out across the UK this month.

Snack with a difference

The Fabulous Bakin' Boys has launched Fruit 'n Oat slices, which it claimed is the first-ever baked snack to contain one portion of fruit. Individually packaged, the 40g bars are available in Strawberry 'n Oat, Blackcurrant 'n Oat and Apple 'n Oat variants. The product comprises two layers: a fruit base containing sultanas, apple and apricots, topped with oats and sprinkled with strawberry, blackberry or apple pieces.

Northern Ireland-based artisan bakery Genesis Crafty has launched a new on-pack promotion 'pic-a-nics', in association with film-maker Warner Bros to promote its new release Yogi Bear 3D.

Gourmet doughnuts - the latest trend

Nearly half the population like to treat themselves to indulgent foods, boding well for snacks pitched as affordable luxuries, such as doughnuts. The doughnut category grew by 7.6% in value to £59m and 12% in volume in 2010. In particular, the US-style doughnut category shows massive potential, especially among young people.

Seed crispbread brand Dr Karg has added to its portfolio with the launch of a new line of organic wholegrain snacks.

Penguin opts for caramel

United Biscuits UK has added a caramel wafer to its McVitie's Penguin range, available in a nine-pack, to sit alongside the existing Penguin Wafer.
