Spianata&co continues London expansion

Spianata&co is hoping to bring its store count to eight with plans to open two further bakery retail outlets in the next 12 months.

The London-based bakery business, which produces its self-named sandwiches using a traditional Roman flat bread, will look to open another site in the centre of the capital in the next year, as well as an additional outlet in the West End region.

At the opening of the firm's sixth store yesterday on Hay Hill in Mayfair, London, Stefano Nicolai, managing director of Spianata&co, told British Baker: "We have not stopped our growth in the city of London, we will carry on opening outlets in central locations because our concept works very well city professionals.

"However we wanted to explore other locations in London, and in particular I feel that in the West End there are two or three areas such as Hanover Square where our concept would work very well."

The company has taken on five new members of staff at its new Mayfair location, with the total number of employees currently standing at 40.

Spianata&co’s Mayfair site features a new layout and design, which will be rolled out in the existing five London outlets. It incorporates both traditional Italian concepts as well as more modern features such as cold-lit ceramic shelves to keep sandwiches fresh.

The company’s current London sites are based on Watling Street, Brushfield Street, Holborn Viaduct, Blomfield Street and More London Place.

Nicolai added: "It was a difficult year when the recession hit but we became a stronger company because of it, managing our costs much more efficiently. However, in the last year we accumulated like-for-like sales in some of our locations above 5-6%. So we feel the worst is behind us and we're optimistic, and we are hoping that next year we will see an increase in sales."

The firm recently won the only platinum award for the Best Independent Sandwich Bar of the Year at the Sammies - the British Sandwich Industry’s annual awards.
