An experienced restaurant duo are to open a new-concept bakery in Bristol.

Steven Whibley, formerly of Le Pain Quotidien and Gail’s Bakery, and Troels Bendix of Breads Etcetera and The Hungry Guest, have spearheaded Pinkmans bakery.

It will open in October in a prime restaurant site at the top of Bristol’s Park Street, in the place of Café Rouge and Flavour Sensation. Pinkmans will be a fully licensed bakery café serving breads, pizza, coffee and cake to take away and eat in through the day and evening.

Whibley, founder, said: “We are delighted to be opening Pinkmans here in beautiful Bristol and are very much looking forward to becoming part of the great quality food and baking scene that is burgeoning here and in the south west.

“Great bread is not about nostalgia and yesterday, it is a food for now and for the future – and we intend to have a lot of fun making, baking and serving it here.”

The letting was transacted by leisure property specialists Fleurets on behalf of the vendor and Pinkmans was represented by Clear River.

Kevin Conibear, an associate at Fleurets, said: “The Pinkmans concept is the ideal addition to Bristol’s rich leisure scene, a city which continues to attract innovative, independent brands, in addition to more recognised names, which is creating significant competition for high footfall locations.

“The property was under offer within days of going to the market, further highlighting Bristol’s popularity and demand for the city.”
