Tell us about your career so far:
I started out as a bakery apprentice in 2002 at the age of 16. Whilst working at Just Desserts, I also attended college for two years on a patisserie course. I learned the job inside out and gained experience in all aspects including production, packing, and cleaning. I then started ordering ingredients, which became my main responsibility, eventually transferring to the purchasing department as the main buyer.
I have watched the business grow from strength to strength, and I am very proud to be a part of it.
How would you describe your job in a sentence or two?
To maintain the best prices possible for good quality raw materials and packaging, and related items, whilst ensuring that we use certified suppliers.

What does a typical day look like for you?
A typical day involves price checking, placing orders, liaising with suppliers, and handling any issues or complaints.
As a buyer, it is important I stay in close contact with our NPD team to ensure we have the ingredients and supplies needed to keep up with our ever-changing catalogue. I also work closely with our bakery manager and the warehouse team to ensure we are up to date on any issues that may arise.
What challenge have you faced recently:
A major and continuing challenge has been the price increase across the board. A combination of post-COVID market disruption, changes to import procedures following Brexit, rising energy and transport costs, and ongoing global instability has increased the cost of importing ingredients.
What have been some highlights of your career?
The first highlight is the trajectory of my career so far. After 20 years in the bakery, through hard work and dedication I managed to work my way up the career ladder to join the purchasing and management team.
Another highlight has been contracting deals with major suppliers of whom we now have strong, persisting partnerships with. Being able to recognise the part I played in establishing these relationships has been rewarding.

What’s a common misconception about your role?
I think it would be that as a buyer, I’m only interested in getting the cheapest price possible. Whilst I do value price, I also am dedicated to maintaining high standards and only using quality ingredients. We also value good service and meaningful, long-lasting relationships.
I think it is important to meet in person with suppliers to get to know them on a more personal level, especially to gain a better understanding of their business, their work, and any challenges they may face.
What advice would you give to young people entering the baking industry?
If you set your mind to it and really want it, then believe in yourself – anything is possible! Be relatable, be willing to learn, work hard, and most importantly, enjoy it.
