Barry Callebaut has launched a new chocolate as part of its Cacaofruit Experience range of products.
Barry Callebaut described the chocolate, which is made using 100% pure cacaofruit, as a “fresh, fruity delight”.
It added that, while usually around 70% of the cacaofruit is discarded as waste, the products in its Cacaofruit Experience make use of the entire fruit – beans, peel, pulp and juice – resulting in a range of ingredients that can be used in applications from including bakery and desserts.
The chocolate will roll out to the UK market in 2020 and will be available in two variants: WholeFruit Bold and WholeFruit Velvety.
“Our goal in R&D is to develop innovations that are on trend, satisfy unmet consumer needs and taste great. WholeFruit chocolate scores on all three points,” said Pablo Perversi, chief innovation, sustainability & quality officer at Barry Callebaut.
He added that the chocolate would respond to the need of millennials and centennials for ‘healthy indulgence’.
“Moreover, by using more of the cacaofruit and wasting less, we are also having a positive impact on the planet and its people.”
The launch comes two years after Barry Callebaut unveiled ruby chocolate.
