Speculoos Cake

Wallet-friendly cake pops, decadent cream cakes, nostalgic tarts, and gelato-stuffed croissants are among the sweet bakery treats launched by retailers, brands, and foodservice suppliers.

Some feature classic flavour combinations like cookies & cream, hazelnut & milk chocolate, and lemon & white chocolate, while others tap into lingering trends for salted caramel and caramelised biscuit. There’s even a recipe with time-treasured ingredient treacle.

Coming hot on the heels of our previous sweet NPD round-up, check out more details on the latest bakery innovations as follows:

Sweet treat manufacturer Baker & Baker has introduced a lemon cheesecake doughnut for UK foodservice.

As the second doughnut to be released under its premium Black Label brand following the Salted Caramel & Nut Doughnut, the new limited-edition product is double filled with a blend of creamy curd and zesty, sweet lemon, topped off with bright yellow drizzle waves and pieces of white chocolate on yoghurt icing. It available until September as a thaw-and-serve item, which offers a three-day shelf life when chilled.

“We’ve introduced this product to help our customers tap into an opportunity to drive margins in a challenging environment,” comments Helen Sinclair, UK marketing manager at Baker & Baker. “Our market research shows that time and time again, consumers are prepared to find the money to spend on a premium treat… but only if it’s truly premium. When life gave Baker & Baker lemons, we have given the world a luxury, double-filled, premium lemon cheesecake doughnut.”

Foodservice supplier Country Range has launched a duo of decadent desserts that it claims showcases the brand’s creativity at its best.

The Peaches & Cream Torte comprises peach compote and creamy vanilla-flavoured cheesecake layered on Victoria sponge, topped with freeze-dried raspberries and peach pieces.

The Speculoos Cake (pictured at top of article) features three layers of sponge filled with caramelised biscuit cream and sauce, covered with buttercream and a further drizzle of biscuit sauce.

Sold frozen, the cakes just need thawing before serving and come pre-sliced into 14 and 16 portions, respectively. “With spring in full swing and a host of celebratory occasions on the horizon as we enter summer, it’s the ideal time for caterers to enhance their dessert offering with some fresh flavours and innovative treats,” commented Country Range Group’s marketing manager Rachel Porter.

In celebration of its 135th anniversary, bakery chain Huffkins is selling a limited-edition Warm Treacle Tart – a nostalgic favourite dating back to the late 19th century, around the same time the company began operations.

The tart, along with Raspberry Cream Horns and Knickerbocker Glory, will be available at Huffkins’ nine bakery and tearoom locations across the Cotswolds and in London as part of its special ‘Founders Fest’ event running from 6 to 22 June. “We’re proud to continue Mr. Titcomb’s legacy, bringing generations of tradition and the best local ingredients to our customers,” commented Huffkins MD Joshua Taee, whose family took over the business in 1999.

Scoops of the ice cream, which features buttery swirls of Ole & Steen’s Cinnamon Social, are being sold in a cup (rsp: £4.50), on top of a pastry slice (add £2), with an espresso poured over – aka Affogato (£4.50) – or wrapped inside a warm croissant (£6.25).

These are available at 14 selected stores across London and the Southeast including St James, Notting Hill, Richmond, Kingston, Westfield White City, Guildford, Windsor, Seven Dials, Greenwich, Wigmore St, Eccleston Place, Hampstead, Northcote Road, and South Kensington. Pipp & Co Mixed Berry Vegan Doughnut 1

Vegan Mixed Berry Doughnut, Pipp & Co

Swindon-based Pipp & Co is ensuring vegan consumers – an estimated 2.5m of which live in the UK – don’t miss out on its treats by launching a new plant-based Mixed Berry Doughnut. It sees vegan brioche dough filled with mixed berry jam and finished with a light dusting of raspberry powder. The doughnuts are available in boxes of six (rsp: £15) at its store in Bristol, for delivery within Swindon, and from stockists in the surrounding area.

As with the rest of the doughnut specialist’s range, the new item does not contain hydrogenated fats, palm oils, or GMOs. It is made, however, with oat milk produced in-house from scratch and maintains the same soft texture to standard brioche-based doughnuts thanks to a 24-hour fermentation and three-stage proofing process.

It’s also a far more sustainable product. “Plant-based butter produces 82% less CO₂ and uses 97% less water than regular butter,” commented Pipp & Co co-founder Mario Evangelista. “That really hit home. It’s such a simple swap, but it makes a big difference.” Even the sugar dust on the top is a by-product of the raspberries the firm uses.

Lemon Profiteroles, Morrisons

As part of its summer 2025 range, the supermarket retailer has rolled out new Lemon Profiteroles (rsp: £3.50 for a six-pack) under its premium tier The Best range.

These are filled with whipped cream and hand-finished with Morrisons’ zesty Belgian whiter chocolate fondant made with Sicilian lemon juice.
