- Have attempts been made to tap these markets? If so, why have they failed?
- What types of baked goods to gluten-free manufacturers still struggle to produce. Why is this?
- How much a factor has cross-contamination been in slowing or preventing development of products to tap some of these opportunities
The feature will also give examples of gluten-free innovation, and look at work being undertaken to develop new ingredients.
