It will explore the up-and-coming trends that will make an impact on the bakery scene in the next year, covering topics from flavours to formats, sourcing, ingredients, production methods, retail channels and sustainability.

The trends may be broad in scope of specific to a type of product, with everything from bread to buns, cakes, pastry, pies and more considered.

To establish the trends, we want to know:

  • What are the keys areas of focus when it comes to health? What impact will HFSS have?
  • How does this differ between the types of products (sweet and savoury) and who they’re made by (craft baker or large manufacturer)?
  • What are the wider trends playing out on the bakery scene? For example, how are concerns about sustainability or the rise in veganism and other specialist diets playing out
  • What impact will inflation have on the bakery market over the next year
  • Which bakery products are set to go mainstream next year and why
