London cake specialist Konditor & Cook has revealed its summer collection, which features a range of cakes inspired by ice cream.

Called Cool for the Summer, the four-strong line-up features a Raspberry Ripple Cheesecake and a Yuzu Zinger Cake. It is also launching a soft-serve ice cream, topped with a choice of Brownie Bites or Curly Whirly Crumble, and drizzled with homemade caramel or chocolate sauce.

The company, which has seven sites across the capital including Waterloo and The Gherkin, sells a range of cakes as well as brownies, biscuits and tarts.

Earlier this year it rebranded the Cornwall Road site in Waterloo as the Cake Hole, to coincide with the launch of its spring range which featured a Gin & Tonic Cake.

Here’s the full line-up of Konditor & Cook’s new summer range:

Yuzu Zinger Cake (£34) – a Konditor & Cook take on the Baked Alaska. Vanilla sponges soaked in yuzu syrup stacked with a fluffy marshmallow and meringue whipped top, then sandwiched with lemon curd, and topped with yuzu frosting.

Blackcurrant Sundae (£34) – a lime-soaked vanilla sponge with purple cassis frosting, filled with sweet and sour blackcurrant jam.

Raspberry Ripple Cheesecake (£24) – a buttery biscuit base topped with vanilla cream cheese and decorated with raspberry swirls.

Victoria Glory Cake (£30) – drawing on Brits’ love of Eton mess, the cake features a Victoria Sponge topped with fresh berries, plus raspberry and vanilla meringues.
