Global chocolate supplier Barry Callebaut has unveiled a propriety approach to cocoa fermentation called Flavourcode.

Developed through many years of research, the new platform has been designed to help create natural flavour profiles in chocolate and reproduce them consistently. Future applications range from artisan kitchens to large-scale food manufacturing including bakeries.

Cocoa characteristics naturally vary between origins, harvests, and seasons, noted Barry Callebaut, adding that its end-to-end expertise allows it to harness that diversity in discovering richer and more distinctive flavours.

The development comes as consumer expectations around chocolate continue to evolve. Barry Callebaut’s research across 24 markets indicates that consumers are showing greater interest in distinctive, complex and more immersive taste experiences, while brands and manufacturers are looking for new ways to create meaningful flavour differentiation across their portfolios.

“Cocoa is an extraordinarily complex raw material, and understanding how to work and innovate with that complexity is a core part of Barry Callebaut’s expertise,” commented Hein Schumacher, who became CEO of Barry Callebaut earlier this year. “With Flavourcode, we are putting that expertise to work for our customers, opening up unexplored natural flavours within the bean, driving taste intensity, while delivering consistency and workability.”

The first commercial product, Callebaut Flavourcode 01, is being launched next month for European chocolatiers, pastry chefs, and artisan producers. It is said to deliver a layered flavour profile, opening with tropical fruit notes including passion fruit, pineapple, mango, and ripe banana, followed by dried-fruit characteristics and a refined cocoa finish. Applications include pastry, confectionery, ice cream, and plated desserts.

“Flavourcode 01 is just the beginning,” said Schumacher. “We see significant potential to build this into a broader innovation platform across gourmet and food manufacturing.”

Additional taste profiles are planned as the Flavourcode range develops, with potential directions currently being explored including Dark 70%, Dark 54%, and Milk Chocolate profiles.

Earlier this year, Barry Callebaut unveiled a new online training platform designed for chocolatiers, artisan pastry chefs, and emerging culinary talent. Among the courses available are Chocolate Basics, Bonbon Masterclass, The Architecture of Entremets, The Art of Viennoiserie, and Biscuits Unlocked.

Barry Callebaut is a member of the World Cocoa Foundation, which recently helped develop new methodology to assess the risk of deforestation.
