Salted caramel has topped the list of must-have flavours for bakers during the colder months, according to ingredients supplier British Bakels.

Warming, spiced flavours dominate the top 10 which includes pumpkin spice, brown butter, and caramelised biscuit while cherry brings a spot of colour and tang to the line-up.

British Bakels flavour predictions draw on trends across bakery and adjacent categories including desserts, confectionery, cereals, beverages, dairy and snacking, alongside consumer approval ratings, Mintel data and wider cross-category momentum.

“Familiarity is a powerful driver in sweet bakery, but familiar doesn’t have to mean predictable. What we’re seeing for autumn, and winter is established flavours being given new relevance through different pairings, formats and finishes,” said Dan Jones, marketing manager at British Bakels.

Here’s the top 10 expected to woo consumers this autumn and winter:

  8. Brown butter

Salted caramel’s approval rating increased from 31% for the first half of 2026 to 49% for the second half, while 38% of consumers said they look for cherry flavours in sweet bakery and 39% for spiced biscuit. Maple purchase consideration also increased from 36% in early 2026 to 40% for the second half of the year [Mintel].

“For bakers, that creates plenty of scope to innovate without asking consumers to make a huge leap. Salted caramel can evolve through sea salt or smoked notes, banana pairs naturally with brown butter or custard, while maple and brown butter can bring a more premium edge to familiar favourites,” adds Jones.
