Gail’s and Paul Bakery have revealed a host of new products to tempt customers this autumn.
Savoury treats include a squash & chipotle sourdough sandwich, a croque with hot honey, and a crustless take on homity pie. Apple crumble is a popular choice when it comes to sweet treats this season, with Gail’s offering an apple & blackberry crumble cake and Paul an apple crumble éclair.
“Baking has always been an expression of farming and the agricultural cycle, changing with the seasons based on what nature grows at different times of year,” says Gail’s master baker Anomarel Ogen. “Our autumn menu reflects the harvest season – the colour of the new wheat in the fields, the smell of the first milled flours and seasonal vegetables added into new bakes.”

Squash & Chipotle Fritter on Potato & Rosemary Sourdough
Described by Gail’s as ‘a plant-based celebration of autumn’, crispy squash fritters are layered with charred hispi cabbage, pickled fennel, rocket and a smoky squash-and-chipotle dip made with plant-based cheese.

Crustless Cheddar, Potato & Caramelised Onion Slice
This is Gail’s take on the classic homity pie. Maris Piper potatoes are baked with collard greens, caramelised onions, and an egg custard, layered with mature cheddar. Cheddar and millet seeds top the slice for crunch.

Cheese & Leek Brioche Bun
A brioche filled with cheddar bechamel and braised leeks, topped with grated ricotta salata. Inspired by the French classic Poireaux au Gratin, Gail’s describes this as a rich and savoury nod to autumn comfort food.
