
Premium eggs, prebiotic fibre, and mousse mixes are among the new products being launched by bakery ingredient suppliers.
Producers who have developed new products showcased below include Dawn Foods and British Bakels, while CSM Ingredients has revamped its popular Craigmillar Merjel jelly with a cleaner-label recipe.

Bijou eggs, St Ewe Free Range Eggs
Cornish-based egg supplier St Ewe Free Range Eggs has launched a premium small egg designed for bakers and other culinary professionals.
Bijou eggs offer a higher yolk-to-white ratio and deliver ‘rich flavour, vibrant colour and luxurious texture’, said the supplier. With firmer whites, rich yolks and higher protein concentration, the eggs are ideal for applications such as poaching, emulsifying, whipping and patisserie, added St Ewe.
“The St. Ewe team has poured its passion into perfecting our new Bijou eggs, rigorously testing them and collaborating closely with our chef partners,” said St Ewe founder and CEO Rebecca Tonks.
Bijou eggs are available in five-dozen cases for the hospitality sector and foodservice industry.

Delifruit Fillings, Dawn Foods UK and Ireland
Dawn Foods has expanded its natural ready-to-use Delifruit Fillings line-up with five new flavours.
Delifruit Fruit Fillings are described as having a high fruit content for a fresh taste but are easily pipeable – making them suitable for a range of fresh or baked applications. They contain a mixture of whole fruit, fruit concentrate, pulp or purée.
Four new flavours – Pineapple, Mango, Forest Fruits and Apple & Cinnamon – have been launched as Delifruit Classic Fruit Fillings with 60% fruit content. Blueberry flavour has been launched as a Delifruit Daily Fruit Filling with 44% fruit.

Mousse Mixes, British Bakels
British Bakels has extended its chilled dessert range with two new Mousse Mixes that complement its existing Cheesecake Mix.
The supplier said the no-bake ‘just mix with water and chill’ products are designed to enable efficient dessert creation in the bakery, foodservice and retail channels.
Suitable for easy integration into high- and low-volume production environments, the Mousse Mixes are available in two variants: Chocolate and White Vanilla.
“These mixes give our customers the freedom to innovate quickly, consistently and creatively,” said British Bakels marketing manager Dan Jones. “Whether you’re developing premium patisserie lines, limited-edition mousse pots or an everyday cheesecake range, the ‘just mix with water and chill’ format makes it easy to execute ideas at scale.”

Craigmillar Merjel revamp, CSM Ingredients
Craigmillar Merjel cold process jelly has been relaunched with a cleaner label in a more convenient 8kg format.
Made with natural flavours and colours, Merjel is now free from sulphur dioxide. Designed for applications including topping fruit tarts or adding a glossy finish to cakes, it can be used straight from the pail and is available in three varieties: Strawberry, Raspberry and Neutral.
“Merjel’s new better-than-ever formulation is made with natural ingredients and ensures exceptional high-quality end products,” said Barbara Lanzoni, Craigmillar category director fats, oils & coating solutions.

CarobBiome, CarobWay GmbH
Food tech company CarobWay GmbH has developed a carob-derived prebiotic fibre it says will nourish the gut without bloating, gas, or discomfort.
Called CarobBiome, it contains a mix of soluble fibres that have antioxidant and prebiotic benefits, and insoluble fibres that help regulate bowel functions. CarobWay describes the ingredient as suitable for applications including baked goods, confectionery, snack bars and meal replacements.
“Not all prebiotics are equal,” said Udi Alroy, CEO and co-founder of CarobWay. “While many fibres on the market can cause some level of stomach discomfort, CarobBiome is specifically designed to ease bloating and maintain a happy tummy.
“Moreover, it is completely natural, vegan, and allows for a clean, simple ingredients label.”
