Chefs use Maxx 20.20 combi ovens

Innovative ovens, chillers, and scales as well as metal detector interfaces and packaging software have been unveiled by bakery equipment suppliers.

These tools look to improve productivity, efficiency, accuracy, safety, and compliance at companies ranging from large-scale manufacturers down to foodservice operators.

Check out our round-up of the latest equipment available to UK bakers:

Precision scales, Adam Equipment

A new range of precision balances and washdown scales from Adam Equipment has been added to the hygiene-focussed portfolio supplied by Norfolk-based Teknomek. Designed to support accuracy, hygiene and compliance, the new models provide food manufacturers with reliable weighing solutions suited to demanding production environments.

The precision balances are said to deliver consistent, accurate measurements for ingredient control, portioning and quality assurance processes, with features such as intuitive operator interfaces, rapid stabilisation times, and internal calibration capabilities.

Meanwhile, the washdown scales are constructed with sealed components and durable materials, making them particularly well suited to production lines, preparation areas, and high-care environments where hygiene protocols are rigorous and downtime must be minimised.

Large combi ovens, Convotherm

German manufacturer Convotherm has launched two new floor-standing combi ovens for UK foodservice operators who are looking to increase output, control costs, and manage pressure on kitchen space and labour. These include the new 20.10 and 20.20 models, which offer larger capacity to the brand’s existing Maxx range, and are said to be purpose built for high-volume kitchens across sectors including healthcare, education, care, contract catering and hotels.

The familiar, standardised Convotherm interface means kitchen teams can move between units with minimal additional training, supporting consistency in sites where staff turnover or limited skilled labour may be a challenge. At the same time, manual and automatic operating modes give chefs flexibility, from repeatable production processes to individual cooking profiles, while connectivity via KitchenConnect allows multi-site operators to monitor performance and improve consistency.

Cost control is another key focus, with the units combining efficient energy and water usage. Lower lifecycle costs are supported by robust construction and spare parts availability, and a fully automatic cleaning system reduces manual labour at the end of service.

Metal detector interface, Fortress Technology

Supporting food manufacturers, including bakeries, to efficiently manage safety risks is a new metal detector interface from Canadian equipment supplier Fortress Technology, which has its EMEA headquarters and manufacturing site in Banbury.

It features a simple, user-friendly design including bold buttons, contrasting icons, and a multi-colour warning system ensuring that even in high-pressure situations staff can immediately access all the critical control point information, and review and act upon alerts or events in the log. The high contrast digital display also has light and dark modes to help improve visibility and reduce errors in fast-paced manufacturing facilities.

Other features include real-time monitoring and clear presentation of live production statistics including contaminant detection, conveyor and reject bin status, throughput metrics, sensitivity settings and the product type being inspected – all of this event data is clearly logged for extraction and data reporting.

Packaging software, Markem-Imaje

Product marking and coding systems provider Markem-Imaje has unveiled Version 7 of its CoLOS Software for packaging operations. One of the key features of the latest update is that it is designed for companies with multiple production facilities, including in the UK.

Building on the strengths of its existing software suite, Version 7 offers industry-certified advanced security features, centralised management for packaging operations across locations, capability to minimize downtime, and a next generation responsive web user interface. It ensures consistency, compliance, and a single source for all messages and label designs, as well as allowing visibility into production efficiency and scale up possibilities.

CoLOS Version 7 is certified for the IEC 62443-4-2 standard for cyber security requirements for product components, meaning manufacturers can safely move local software systems to central IT infrastructure. The new software is available with the complete range of Markem-Imaje printers, either in on-premises or cloud-based subscription model.

Solid-door chilled display, Storers

Nottingham-based refrigeration and catering unit manufacturer Storers has added a new solid-door option to its Airwings multideck fridge range. The innovative design is intended to help operators maintain highly efficient, consistent chilled displays as changing climatic conditions – such as heat waves – present new challenges for the foodservice sector.

The new solid-door model incorporates Storers’ innovative ticket strip system that not only displays pricing and product information but also helps direct chilled air back into the cabinet, thus reducing cold air loss and improving overall efficiency.

Grab-and-go multidecks are an essential part of many foodservice operations, providing highly visible, easily accessible displays for sandwiches, salads, drinks and other chilled products, noted Storers.
