An expert in product development from sweet bakery supplier Mademoiselle Desserts has completed the line-up of speakers for British Baker’s upcoming webinar on AI.

The free webinar, sponsored by Aiperia and TraceGains, is titled ‘How AI and technology is changing the baking industry’ and takes place at midday on Tuesday 30 September.

Melissa Shaw, product development controller at Mademoiselle Desserts, is the fourth member of the expert panel which also includes a chief technical officer at the firm behind Gail’s and The Bread Factory, a director of an international bakery consultancy, and a lead technology specialist.

Shaw has built a 25-year career spanning both retail and manufacturing, holding positions across technical and NPD functions. She currently leads all product development at the Maidenhead site of Mademoiselle Desserts, which also operates facilities in Taunton and Corby.

A range of high-quality sweet bakery goods are produced by the manufacturer including cheesecakes, brownies, and cakes for foodservice and casual dining customers, with the factory in Maidenhead specialising in handmade cakes baked from scratch. This includes a Blackberry & Mascarpone Cake created last year through an AI-powered recipe development initiative.
