New pizzas, pasties, slices, and snacks comprise the latest round-up of savoury bakery innovations from brands.

These range from authentic Italian pizzas sold at supermarkets and Euro-themed pizzas available at foodservice outlets, to cider-infused Cornish pasties, pulled pork slices, and crisps with less fat but more spicy and meaty flavours.

Below are full details of the five savoury bakery NPD:

Sourdough Pizzas and Garlic Bread, Crosta & Mollica

A four-strong range of Neapolitan-style sourdough pizzas from has been rolled out by the modern Italian food brand at the chilled aisles of Tesco stores nationwide. Billed as offering restaurant quality meal solutions at an accessible price point, the pizzas are imported from Italy where they are proved for 24 hours before being fired on a lava stone from Mount Etna and hand-topped.

Included in the range is the Formaggi Sourdough Pizza (rsp: £6, 410g), an ‘elevated vegetarian take on a classic cheese and tomato pizza’ which is topped with buffalo mozzarella, smoked provola cheese, and aged hard cheese. There’s also the Ready-to-top Sourdough Pizza Base (rsp: £2.75, 270g), said to be the brand’s bestseller. Meanwhile, two varieties of the smaller, single-serve Pinsa Roman Pizza – Tomato & Mozzarella (rsp: £3.50, 154g) and Salami & Mozzarella (rsp: £3.50, 160g) – are described as providing a more ‘cloud-like’ textured mouthfeel.

B Corp-certified Crosta & Mollica, which gained new investment and a new chairman earlier this year, is also extending its frozen range with new Roast Garlic & Mozzarella Pizza Bread (rsp: £2.95, 229g). Available via Ocado, it features wood-fired sourdough base in a pizetta size, topped with shaved mozzarella, a rich cream sauce, flakes of roast garlic and fresh chives.

 

Crinklys Chilli Beef, Jacob’s

The Pladis-owned crackers brand is looking to widen the appeal of its oven-baked Crinklys range, worth £12.9m per Nielsen data to 6 April 2024, with a third non-HFSS version. The new Chilli Beef flavour follows last summer’s debuts of Cheese & Onion and Salt & Vinegar varieties, made with 30% less fat, which ranked within the top five non-HFSS launches of 2023 and reeled in an additional £3.7m in sales (representing 43.3% growth) according to Nielsen sales data to 22 April 2024.

The new flavour caters towards increasing demand for ‘spicy’ and ‘meaty’ flavours, noted the company. Multipacks of six 23g bags (rsp: £1.75) were launched first into Asda stores before a wider retail rollout, while a £1.25 price marked pack format (90g) was also made available for independent retailers.

In addition, Jacob’s Crinklys Cheese & Onion is featuring in a limited-edition run of fully recyclable caddies (rsp: £2.50), joining other Pladis brands Twiglets, Cheeselets, and Mini Cheddars for shareable snacking occasions that go ‘hand-in-hand with watching sports events over the summer’.

Ginsters said its new BBQ Pulled Pork Slice aims to attract new shoppers by tapping into the ‘impulsive nature of the savoury pastry category’, with work-from-home lunches increasing by almost a fifth since pre-Covid times (+22% per Kantar Usage data for year ended 3 September 2023 versus same period in 2019).

Available at Tesco, Asda, Morrisons, Waitrose, Nisa and Booker stores, the new slice (rsp: £1.95) comprises 100% British Pulled Pork cooked with red peppers in a sweet and tangy BBQ sauce, all encased in puff pastry with an applewood smoked crumb topping.

It builds upon Ginsters’ previous limited-edition slice flavours including Four Cheese & Chive, Cauliflower Cheese, Creamy Tomato, Chicken & Mozzarella, and Chicken Fajita, which the Samworth Brothers-owned brand claimed were more popular among younger shoppers and had driven a total of £445k incremental spend.

 

Pork & Devon Red Cider Pasty, Warrens Bakery

Cornwall-based bakery chain Warrens has collaborated with Devon craft cider brand Sandford Orchards on a new pasty (rsp: £4.65) available at all 39 of its stores across the West Country, South Wales and Southeast England. Encased in a hand-crimped flaky pastry case, complete with a sage and rusk topping, the pasty is filled with pork, apple, potato, and onion baked with a generous helping of Devon Red cider.

Both companies have historic claims – Warrens labels itself as the world’s oldest Cornish pasty producer while Sandford Orchards is based in the UK’s oldest working cider mill. “For centuries, a pasty and pint of cider has been considered the perfect pairing for a Westcountry summer lunch,” commented Barny Butterfield, founder of Sandford Orchards. “Now the team at Warrens Bakery has brought that tradition bang up to date with their newest pasty recipe and we love it.”

Warrens recently reported 10% growth in sales for its latest financial year, having successfully completed a Company Voluntary Arrangement in 2022.

Euro-themed Pizzas, Flatstone Pizza Co.

Adding to the hattrick of bakery NPD rolled out for the 2024 European football tournament are a brace of Flatstone Pizza Co. offerings from foodservice bakery supplier Country Choice.

Catering to England fans is the English Hog Roast Pizza topped with BBQ pulled pork, sage and onion stuffing, Bramley apple sauce, triple cheese, red onions, oregano, and gravy. Meanwhile, the Scottish Haggis Pizza features traditional meat haggis (vegetarian haggis is also available), triple cheese, red onions, and oregano.

Once baked, operators should cut the 11” pizzas in half before being put into Flatstone Pizza Co. branded grab & go boxes and kept in a hot holding cabinet. Each half pizza has an rsp of £5.
