Dawn Foods has unveiled two limited edition, bake-stable liquid flavours to help bakers embrace ‘quintessential English summertime’ flavours.
Made in the UK using natural flavour components, the new highly concentrated flavourings are available in Wild Strawberry and Classic Trifle variants.
They can be added to ready-to-use ingredients such as creams, frostings, and mousses, as well as directly into the batter for cakes, cookies, and muffins, according to the company.
The Wild Strawberry variant gives what Dawn Foods describes as a subtle strawberry flavour which is ‘perfect’ for use in strawberry & cream gateau or strawberry tart, or paired with lemon, lavender, thyme, or black pepper for a modern take on traditional summer flavours.
The Classic Trifle Flavouring, meanwhile, has hints of sherry, berries, custard and cream, and embraces the trends for nostalgia and tradition with a twist which are dominating this summer. For example, Dawn Foods suggests using it to make modern afternoon hybrid cakes such as Classic Trifle Flavour Muffins – muffins injected with custard and fruit, then topped with a swirl of trifle infused frosting and fresh fruit.
According to Dawn, both these on-trend flavours will help bakers premiumise sweet bakes and, as a result, attract incremental sales this summer.
“Today’s consumer – particularly those in Gen Z aged 16-25 years – want to explore new tastes and sensory experiences,” explained Jacqui Passmore, marketing manager of Dawn Foods UK & Ireland.
“They are looking for products that can deliver this sense of adventure with new flavours, colours, textures and aromas,” she added, citing a Kantar Profiles/Mintel report from February 2022 which found that 29% of consumers stated a ‘new flavour twist’ as a key reason for influencing product choice across cakes, cake bars and sweet baked goods.
“Dawn’s new Liquid Flavours give bakers the opportunity to add some ‘zing’ to their bakes and easily tap into current flavour trends for fresh fruit with provenance and the big trend for bakery/dessert hybrids with a nostalgic or retro feel,” Passmore said.
