Baking Industry Award winners Peter Doughty-Cook, Tim Goodwin, and Nishitha Kannan have been named among the most exciting chefs in pastry and bakery right now.
British Baker’s sister title Restaurant published a list of the top 13 people who are making waves in the market.
The following individuals made the baker’s dozen:
- Anna Higham – pastry chef at Quince, a “traditional British bakery” in Islington, which has a focus on bread made exclusively with UK-grown stoneground flour
- Helen Evans – founder of Eric’s bakery in East Dulwich, offering French patisserie-style products with staples including barley porridge bread and laminated brioche buns
- Tom Stafford – founder of sugar doughnut concept Doh’nut, which recently launched a franchise site at Exmouth Market in London
- Darcie Maher – co-founder of Lannan bakery in Edinburgh, creating classic sweet pastries including custard slices and yum yums, as well as signature croissant tarts
- Zacharie Poulot – executive pastry chef at Crocadon, a farm-to-table in Cornwall, using a closed loop system to make bread from stout broth
- Tim Goodwin – winner of Baker of the Year 2021 and founder of The Street Bakeshop in Old Basing, Hampshire, which was runner-up in The Artisan Collective competition earlier this year
- Kimberley Lin – founder of Floozie Cookie in Covent Garden, selling all-vegan stuffed cookies in flavours including Pecan Pie, Cinammon Crunch, and PB&J (gluten-free)
- Kae Shibata – co-founder of Cartografie Chocolate in London, suppliers of handcrafted confectionary made with ethically-sourced chocolate
- Peter Doughty-Cook – reigning Baker of the Year and founder of Peter Cooks Bread in Hereford, which produces a core rye-based range predominantly for wholesale including Britain’s Best Loaf 2020 winner, the Wild Hops & Barley Loaf
- Nishitha Kannan – Rising Star winner at the Baking Industry Awards 2022, who developed products for Puratos and Marks & Spencer’s before securing her current job as a specifications technologist at Jones Village Bakery in Wrexham
- Rebecca Spaven and Oliver Castello – co-founders of Toad Bakery in Peckham Road, London, which combines classic and contemporary British bakery elements in a regularly-changing menu
- Lungile Mhlanga – founder of Shoreditch-based doughnut brand Treats Club, which offers an indulgent range of hot doughnuts and desserts served with ice cream and hot chocolate
