Pastry is a big feature of the festive food range unveiled by Marks & Spencer this week.

Turkey & Stuffing Pie, Scallop en Croutes, and Fillet of British Beef Wellington are among the Christmas dishes – alongside a host of sweet treats including a festive makeover for Colin the Caterpillar.

The range includes a selection of products under the Tom Kerridge with M&S Collection banner that have been developed by M&S experts working alongside the chef’s team.

“I’ve combined top-quality meats and seafood with some pretty magical cooking techniques to create these world-class wellies,” said Kerridge. “Christmas is all about making memories around the table with loved ones, not about making a mess in the kitchen. You can leave that to me.”

Fillet of Beef Wellington £195 2.1kg

This whopper of a Wellington features hand-butchered British beef fillet matured for up to 17 days, hand-rolled in mushroom duxelles folded with chicken breast mousse, with black truffle. This is then wrapped in the all-butter hot water crust pastry used in Kerridge’s restaurants. The pastry takes three days of rolling, folding, and resting to develop more than 2,000 layers. It is served with a rich beef and red wine gravy.

The fish is hand-wrapped in a parsley crepe and is finished in a kataifi pastry and served with a shellfish, lemon and dill bisque.
