Pastry is a big feature of the festive food range unveiled by Marks & Spencer this week.
Turkey & Stuffing Pie, Scallop en Croutes, and Fillet of British Beef Wellington are among the Christmas dishes – alongside a host of sweet treats including a festive makeover for Colin the Caterpillar.
The range includes a selection of products under the Tom Kerridge with M&S Collection banner that have been developed by M&S experts working alongside the chef’s team.
“I’ve combined top-quality meats and seafood with some pretty magical cooking techniques to create these world-class wellies,” said Kerridge. “Christmas is all about making memories around the table with loved ones, not about making a mess in the kitchen. You can leave that to me.”
Here we take a look at some of the retailer’s Christmas bakery creations:

Collection Fillet of British Beef Wellington by Tom
This whopper of a Wellington features hand-butchered British beef fillet matured for up to 17 days, hand-rolled in mushroom duxelles folded with chicken breast mousse, with black truffle. This is then wrapped in the all-butter hot water crust pastry used in Kerridge’s restaurants. The pastry takes three days of rolling, folding, and resting to develop more than 2,000 layers. It is served with a rich beef and red wine gravy.

Collection Monkfish, Caledonian Gold Scottish Salmon & Lobster Wellington by Tom
Taking more than two days to make, this dish features wild-caught Scottish monkfish and hand-prepared Canadian lobster meat, in a Caledonian Gold Scottish salmon and monkfish mousse. The fish is hand-wrapped in a parsley crepe and is finished in a kataifi pastry and served with a shellfish, lemon and dill bisque.

Sweet Patagonian scallops in a creamy Champagne sauce, topped with golden and flaky all-butter puff pastry.

Collection Made Without Wheat Butternut Squash & Barber’s Cheddar Tarts
Described by M&S as a vegetarian and gluten-free showstopper, these golden tarts combine roasted butternut squash with a creamy Barber’s Cheddar sauce, encased in flaky gluten-free all-butter pastry.

Garlic Butter Brie Wreath
This extra large whole French brie is surrounded by a wreath of bread, hand-twisted with garlic butter.

Collection Handcrafted Turkey & Stuffing Pie
Ready to cook in an enamel serving dish, this golden pie features British turkey in a creamy sauce with sage and onion stuffing, leeks and smoky bacon. It is topped with all-butter puff pastry and British outdoor bred pork pigs in blankets.

Collection Wagyu Beef Pie
This rich, oven-ready pie is hand-finished with an all-butter puff pastry lattice lid and comes in its own enamel dish. It is filled with slow-cooked British Wagyu beef and onions caramelised in ale.

Dark and milk chocolate mousse reindeer filled with salted caramel, on a white chocolate mousse base with cookie and wafer pieces.

Colin goes festive as the retailer takes its extremely chocolatey sponge roll, covers it in thick milk chocolate and decorates it with chocolate crackers and a popping candy.
